Why does the brine leak into the pail?

The polythene lining has a double purpose:

  1. It guarantees that all the eggs will stay submerged in the brine, especially the ones on top.
  2. The bag is NOT watertight, therefore brine “leaks” through. This ensures that even if swelling occurs (natural osmoses effect) during handling and transportation, it will prevent lids from bursting open from excessive pressure and movement.

Can this product be used to make eggs in vinegar?

Yes, eggs must be strained and thoroughly rinsed in cold water. You may then incorporate them in your recipe.
