Spinach “OVOFLO” gourmet tracks
- Heat oil in a Dutch oven or frying pan over medium heat. Stir in onions, red pepper and mushrooms until onions are lightly golden. Rinse and strain spinach, and add to casserole with basil, nutmeg, salt and pepper. Set aside.
- In a large bowl, beat Ovoflo. Add flour, baking powder and beat until well blended. Add cottage cheese and cheddar. Add to spinach preparation and mix well.
- Pour into a well-greased 33 x 23 cm (9" x 13") glass baking dish (you can use non-stick cooking spray). Cook in a pre-heated oven set at 180°C (350°F), for 35 to 40 minutes or until set. Let cool for 15 minutes. Cut into fingers or rectangles. Serve warm or at room temperature.
Yield : 10 to 12 portions
You can substitute spinach by broccoli, zucchini, or any other green vegetable.
