“Alice de Beaufort” date muffins

  • Preheat oven at 190ºC (375ºF)
  • Line muffin pan with “large” parchment paper molds
  • 1st MIXTURE : in a bowl, whip OVOFLO, milk and vanilla
  • 2nd MIXTURE : in a 2nd bowl, whip butter and brown sugar, then add to 1st mixture while mixing at low speed
  • 3rd MIXTURE : in a 3rd bowl, mix dry ingredients  (flour, salt, backing powder and backing soda)
  • Gradually incorporate 2nd mixture into 3rd mixture until blended
  • Cut dates in chunks of more or less 1 cm (3/8 inch) and add to preparation, stirring with a spoon
  • Bake for 20-25 minutes
  • Yield : 12 large muffins

NOTE : This recipe was handed down to me by my maternal grandmother who in turn received it from her own grandmother, therefore when it reached me, it had traveled down to the 6th generation and 2 more follow me (I was born in 1950). The units for measuring ingredients read: a big lump of butter, 2 pinches of salt, fill palm of your hand with backing powder…” Enjoy, they are exquisite !

  • 125 ml «OVOFLO» (2 eggs)
  • 250 ml Milk (1 cup)
  • 3 ml Vanilla (½ teaspoon)
  • 30 g Butter (1 ½ tablespoon)
  • 250 ml Brown sugar (1 cups)
  • 500 g Flour (2 cups)
  • 15 ml Backing powder (2 ½ teaspoons)
  • 5 ml Backing soda (1 teaspoon)
  • 3 ml Salt (½ c. teaspoon)
  • 250 ml Dates (1 cup)
